Avocado, Egg & Goat Cheese Toast with Arugula and Lemon Oil Drizzle
Ingredients:
- Any kind of bread, toasted
- Avocado
- Hard boiled egg
- Goat cheese
- Arugula
- Lemon vinaigrette*
- Salt and pepper to taste
- Toast bread and spread avocado on toast.
- Pile high with arugula and layer on sliced hard boiled egg.
- Crumble goat cheese on top and drizzle with lemon oil.
- Salt and pepper to taste.
- Enjoy!
*Lemon vinaigrette: Mix 1 tbsp fresh squeezed lemon juice with 3 tbsp olive oil. Add zest of lemon, salt and pepper, and shake well.
